Walk-In Cooler Not Cooling? 7 Causes and What to Check First

A walk-in cooler that can't hold temperature is more than an inconvenience — under the FDA Food Code that Arkansas health inspections are based on, cold food has to be held at 41°F or below. Every degree it drifts up puts product, and your next inspection, at risk. After fifty years of refrigeration calls across central Arkansas, these are the seven causes we see most, in roughly the order we check them.

1. The door isn't sealing

The most common culprit is also the cheapest: a torn or hardened door gasket, a door propped open during deliveries, or hinges that have sagged so the door no longer closes flush. Run your hand around the closed door and feel for cold air escaping. A dollar-bill test works too — shut the door on a bill; if it pulls out with no resistance, the gasket isn't gripping.

2. Dirty condenser coils

The condenser (usually on top of the box or outside) sheds the heat your cooler removes. When its coils are packed with kitchen dust and grease, the system runs constantly but can't reject heat, and the box temperature climbs — hardest on the hottest days, which is exactly when you need it most. If you can see felt-like buildup on the coils, they're overdue for a professional cleaning.

3. Iced-up evaporator

Open the box and look at the evaporator coil (the unit with fans inside). If it's a block of ice, the defrost system has a problem — a failed heater, timer, or sensor — or the door has been leaking humid air in. Ice insulates the coil so it can't cool. Don't chip at it; that's how coils get punctured.

4. Evaporator or condenser fans not running

Listen. If the fans inside or on the condensing unit aren't turning, air isn't moving across the coils and the box will warm no matter how well the compressor works.

5. Thermostat and sensor drift

Controls fail more gracefully than compressors — a sensor reading a few degrees off makes the system believe the box is colder than it is. If the display says 36°F but a thermometer on the middle shelf says 45°F, believe the thermometer.

6. Overloading and airflow blockage

A cooler loaded past its shelving, with product stacked against the evaporator, can't circulate air. Hot product straight from a delivery truck also drags the box temperature up for hours.

7. Low refrigerant

If none of the above explains it, the system may have a refrigerant leak. This one is not a do-it-yourself item under any circumstances — handling refrigerant requires EPA-certified technicians, and a leak that's topped off without being found just fails again.

What you can safely do before you call

  • Check the door, gasket, and hinges; stop the propping-open habit at delivery time.
  • Put a reliable thermometer on the middle shelf and log what it reads.
  • Clear product away from the evaporator; give the box room to breathe.
  • Look (don't touch) for ice on the evaporator and dust blankets on the condenser.

Everything beyond that — refrigerant, electrical, defrost components, compressors — is licensed-tech territory. That's not gatekeeping; it's federal refrigerant law and your own liability.
