An ice machine never quits on a slow February morning. It quits on the hottest week of July, when demand triples and the machine is fighting the ambient heat too. Here's how we diagnose a machine that's stopped producing — and the handful of checks you can safely make first.
First, the three things to check yourself
1. Power and switches
It sounds too simple, but machines get switched to “off” or “wash” during cleaning and never switched back, and breakers trip during storms. Confirm the machine is on, in ice-making mode, and the breaker hasn't tripped.
2. Water supply
No water, no ice. Confirm the water shut-off valve behind or under the machine is open. If your machine has a water filter (it should), a fully clogged filter starves the machine — if you can't remember when the filter was last changed, that's likely your answer. Most manufacturers recommend changing filters every six months.
3. Heat and clearance
Air-cooled machines need to breathe. If the machine is boxed in, its louvers are furred with dust, or it's sitting next to the fryer line, hot weather can push it past what it can reject. Production drops first; then it stops.
The causes that need a technician
Scale buildup
Central Arkansas water carries minerals, and every batch of ice leaves them behind. Scale coats the evaporator plate until cubes freeze wrong, release wrong, or the machine errors out mid-cycle. Descaling a commercial machine properly means partial disassembly, manufacturer-approved chemicals, and full sanitizing afterward — remember, ice is legally food.
Failed water-inlet valves, pumps, and sensors
Each is a straightforward repair for a tech with the part on the truck, and near-impossible to guess from outside the cabinet.
Refrigeration faults
A machine that runs its cycle but harvests thin, cloudy, or incomplete ice may be low on refrigerant or have a failing compressor — EPA-certified work, not a kitchen-staff job.
The rule of thumb

Production capacity drops as air and water temperatures rise — a machine rated at 90°F air/70°F water makes noticeably less ice than its nameplate number. Dirty condenser louvers and tight enclosures make the drop worse.

Most manufacturers recommend every six months, more often with heavy use or hard water. A clogged filter cuts production before it stops it, so declining output is an early warning.
Is cloudy or shrinking ice a problem?
